Can we can get a MIB walk from this device as well using this tool as well as a screenshot of the hardware resources in the web interface?

In this build SNMP hardware collection has only been partially implemented. We've made further progress on the SNMP hardware collection which you should see in the next beta build. (pictured below)
If you have any VMWare ESX hosts in your environment try monitoring these hosts using this beta build. Our CIM implementation is complete so you shouldn't see any missing hardware information. Also, if you're running vCenter, you can monitor your VMWare ESX hosts through the vCenter using the VMWare API. If there is any missing hardware information in either of these scenarios please post that information to this forum.

According to screenshot this is ESX server polled through vCenter. For this case we poll the data using vCenter VMware API and unfortunately there isn't much information about hardware health.
For monitoring hardware health on ESX server you can add the ESX server to Orion, check "Poll for VMware" and provide VMware credentials. In this case we use CIM protocol for polling hardware health on ESX server.

I have two hosts, one polling using the "Poll ESX Server Directly" and the other using "Poll through vCenter" Both show the same results.
In addition, I have a third host that I added first before adding the vCenter host, it is still showing outside the VIM tree as indicated below and it is apart of the vCenter infrastructure (her-m71vhost01).
Does this third host (her-m71vhost01) show more information in "Current Hardware Health" resource?

We're tracking these issues internally as FB93654 and FB93656. Case FB93654 specifically includes the MIB walks provided by setorres.

The big question I Am being asked is are we going to be able to set thresholds to trigger hardware alerts?
Our ESX estate sits on Dell tin, and our hardware monitoring is a bit iffy in this respect.

Threshold values for each monitored item cannot be set within SAM; however, some values can be configured through the Hardware Monitoring Agent Software installed on your hardware. Dell OpenManage Server Administrator is one such example. The illustration below shows how the threshold values for the temperature can be changed from the default values using Dell's software.
On another note however, you can manually define alerting thresholds for any hardware sensor or category in the Advanced Alert Manager. Below is a simple example of how to define an alert for when a Fan exceeds 3600 RPM.
